Ningbo cuisine is most famous for its rock sugar turtle. Another nickname for the rock sugar turtle is "dominating". It was first created in Yongjiang Zhuangyuan Building. It is one of Ningbo's top ten famous dishes. It is rich in protein, vitamin B and other nutrients.

Clean the turtle, open the belly to remove the internal organs, cut off the head, tail, claw tips, and cut into slices.2
