Dry stir-fried potato slices
Potatoes are a common dish in our family. My husband and I both like to stir-fry them dry-fried.

Steps for Dry stir-fried potato slices

Slice potatoes.

Rinse it thoroughly, and soak it in clear water if you are not frying immediately. Drain water before frying.

Add appropriate amount of oil to the pan,(I put vegetable oil), 70% heat, pour in the potato slices, and stir fry.

Stir fry until more water has dried and the oil has separated out.

Remove the potato slices with a colander and fry the vegetables below with excess oil.

Heat in another pan, pour in the potato slices with a colander, add soy sauce, a little salt, a little sugar, a little chicken essence, and vinegar, stir fry. Add green and red peppers and cut off.

Sprinkle with chopped green onion and serve on a plate.
