Steps for Pepper scallion pancakes

Mix the flour with warm water, knead until smooth dough, cover with a damp cloth and leave for 20 minutes.

Divide the dough into small dough and roll out the dough into pancakes.

Spread with a little oil and salt and pepper, and sprinkle with chopped green onion.

Fold the pancakes into organ pleats as pictured.

Start rolling from the end of the folded cake.

Put a little oil in a pan and pancake over medium heat for one or two minutes on each side. The picture above shows it just out of the pot!~

PS: If you like to eat soft, roll out the folded cake slightly thicker. If you like something crispy, roll it thinner.
