Steps for mapo tofu

First pass the whole piece of tofu in boiling water to reduce the tofu from being too shredded.2
Cut the tofu into slices, not too thin, 1-2 cm thick; cut the red peppers into small pieces, and cut the onions, ginger and garlic into pieces for later use.3
Put oil in the pan, similar to the usual amount. After the oil is heated, add the tofu and turn it over one by one to make the tofu stained with oil, but not turn it too frequently, 1-2 times is better. Then add Lao Gan Ma (appropriate amount) and turn them over, and then add a little water. Not too much water, just about half a shovel. After boiling, add salt and turn over to distribute the salt evenly. Then add pepper, minced ginger, minced garlic, and minced green onion in turn. There are currently three types of tofu on the market: firm tofu, soft tofu, and extra soft tofu. Here, we use the soft tofu, the one in the middle.
