This is the third time I have made puffs. The first two times failed due to various reasons. This time, the recipe was learned from the basics and it was very successful. Thanks to Bo Hui!

Steps for Original Puffs

Prepare the materials. The butter softens at room temperature.

Heat the milk, butter, and salt together until they boil, and turn off the heat immediately.

Sieve in low-gluten flour.

Continue to turn on medium heat and stir until a thin film appears on the bottom of the pot, and turn off the heat.

Lay oil paper on a baking plate and squeeze out a evenly sized batter. Leave a gap between each other.

Preheat the oven at 200 degrees for 10 minutes, and bake at 190 degrees for 20-25 minutes. Until the surface of the puffs is golden yellow and swollen and straight, turn off the heat and continue to simmer for 5 minutes, then take out and let cool.

1. The batter should not be too thin. If it is too thin, it will not expand well. Basically, according to this recipe, just two medium-sized eggs will do. 2. The temperature cannot be controlled too high or too low. So it needs to be 200 degrees for the first ten minutes, and then it is reduced to 190 degrees. Pay attention to observation. After coloring, you can basically turn off the oven, so the time is said to be 30-35 minutes, depending on the size of the puffs and the power of the oven. Adjust it in time.
