This dessert is very simple. In order to have a nice color, I use red amaranth juice to make the skin and wrap it in the bean paste filling. It is absolutely delicious.

Steps for dumplings

Boil the red amaranth with water for a while. When you see red soup coming out, you can use it. Filter the soup for later use.

Add glutinous rice flour to red amaranth juice and knead into dough.

Divide about 5 grams of dough evenly into skins and add red bean paste.

Wrap the glutinous rice balls to be cooked.

When the water is boiled, add ginger flowers and red slices of sugar to boil ginger juice (ginger water).

After the ginger juice is cooked, add in the wrapped glutinous rice balls and cook for about 10 minutes and pick up.
