The tomato paste in Lebanon cuisine is not steamed but roasted. It is different from the domestic tomato paste, but it has a unique flavor!

Steps for Mixed roasted tomato paste

    Take an eggplant, preferably a large one. If you have an oven, you can put it in the oven and roast it thoroughly. If you don't have an oven, you can directly put it on a liquefied gas fire and turn it over and heat it through to cool for later use.

    Peel the cool eggplant, take only the eggplant meat inside the eggplant, and chop it up with a knife. Cut fresh red peppers into dices for use.

    Mix all ingredients in a dish. Add salt, white pepper, red pepper, olive oil, garlic and lemon juice. Serve. It tastes better with pita.
