1. You can also slice the eggplant directly into two separate thin pieces, without keeping them connected on one side. I later felt this might be easier to handle. 2. The batter can be slightly thicker, as this makes it easier to shape. I made mine a little too thin, so it would have been better to add more flour and starch. You can also add a small amount of salt and pepper to season the batter at this stage, or dip it in a salt and pepper mix after frying.
