Chop the ribs and marinate with ginger, cornstarch, cooking wine, salt and egg white for an hour.2
Fry the ribs until they are cooked at 80% oil temperature, and pick up the ribs. Wait until the oil temperature rises to 100% again, then put in and fry the ribs until golden brown and pick up for later use.3
Raise another wok, add a little oil, add 1 tablespoon of tomato sauce, vinegar, and soy sauce, 2 tablespoons of sugar, and a little water. Add the fried ribs, simmer until the water is dry, add water starch (blended with cornflour and water), chicken essence, and finally sprinkle with scallions and stir-fry slightly.
