Porter toast
This idea is Big T's (*^__^*)
Thank you T for letting me make cow toast.
Porter toast is used as the material and method of toast, which is originally a very tasteful toast.
Divide the dough into two portions, add bamboo charcoal powder to one portion, and you can make "cow spots".
I just had nothing to do, just having fun, O(④_④)O~~

Steps for Porter toast

  • Make step 0
    1
Completely blend fresh yeast into warm milk.
  • Make step 1
    2
All materials, except bamboo charcoal powder, are divided into two portions in proportion (such as 1:1, 2:3, 4:5 or something). Roughly mix the flour, sugar, and milk with yeast melted together. Then add natural yeast and mix well on low speed. Take one portion (use a large portion of dough, and then you will make more black "cow spots"; otherwise, you will have less), add bamboo charcoal powder, and the color will be dark enough.
  • Make step 2
    3
Also divide the margarine into two portions in proportion, add them to the two dough respectively, mix well on low speed, mix well on high speed for 3 minutes; add salt, and continue mixing for 1 minute.
  • Make step 3
    4
Cover with plastic wrap and place in a warm environment to ferment for 90 minutes.
  • Make step 4
    5
The volume of the fermented dough increases a lot.
  • Make step 5
    6
White dough is made with ordinary white flour; black dough is made with bamboo charcoal powder. Just don't cross the colors.
  • Make step 6
    7
After degassing and rounding the two dough pieces, divide them into doses of any size, and then round them. Wake up for 15 minutes.
  • Make step 7
    8
Take small dough and press it into an oblong shape with your palm.
  • Make step 8
    9
Then roll it up like you would make ordinary toast. Roll all the dough like this.
  • Make step 9
    10
Take a 750g toast box with a lid and brush it with butter. Pick up black and white dough at will and place it in a toast box at intervals. The bottom layer is placed side to side.
  • Make step 10
    11
Then place another layer on top, side up and down, and vertically. Gently put on a plastic bag and ferment in a warm environment.
  • Make step 11
    12
Wait until the dough volume reaches 80% or 90% full, about 90 minutes.
  • Make step 12
    13
After the dough is leavened, cover and place in the preheated oven at 180 degrees for 35 minutes. The surface is not good at this time. For a moment, the white dough surface will be golden when baked. The second is that the seams can be seen on the surface.
  • Make step 13
    14
Cut off all surfaces and the inside will look good. Black is black, white is white, and there are no seams.
  • Porter toast Make Tips

    1. The margarine I use contains more water than butter. If you use regular butter, you need to add more milk. 2. If there is no natural yeast, use a liquid of flour: water =1:1, add a small amount of dry yeast, and let it stand at room temperature for 12 hours + until the taste is sour and bubbles appear.
