In the summer, I bought several kilograms of lemons and made them into sugar-pickled lemon water to drink. At that time, I thought that I wouldn't lose the fragrant lemon peel. After processing it, I could make it into a fragrant lemon peel sauce. So, every time I finish drinking lemon tea, I save the lemon peel and put it in the refrigerator to freeze it. Now that the tea is finished, I have accumulated enough lemon peel to make sauce.

Steps for lemon peel sauce

Put a small amount of salt and water in the lemon slices and cook for 15 to 20 minutes.

Just boil it like this. The purpose of cooking is to separate the skin from the meat. We only need the lemon skin.

Remove the pulp and the transparent peel inside, and try to remove the white film attached to the lemon peel. This workload is huge! Wash the remaining lemon zest several times.

Put it in the cooking machine, add water and beat it to make a paste.

Add appropriate amount of sugar. This amount of sugar depends on personal taste and doesn't matter more or less.

Cook until gelatinous. Allow to cool and divide into parts. Store in the refrigerator or freezer.
