Steps for Hoca Shimizu

Fresh cabbage and clean

Put clear water in the pot and bring it to a boil, drop 2 drops of vegetable oil in the water, add the washed cabbage, and stir it back and forth with a fast cone to soften it.

Remove the cold water and drain it, pour lard into the pan, heat it, and add the blanched cabbage
