[Annual Ring Cake]
The first time I saw this cake was on Yan Se's blog, and I thought it was a difficult task to complete. Recently, I have read more books and practiced more. I saw this cake on other people's blogs, and then I specially found the original book to read-"Welcome to Grace West Tea Time". I found that this is still their signature cake, so I will imitate it for now.
I think circles are like annual rings. Maybe not call it chocolate cream cake, call it annual rings cake better and more suitable as a birthday cake.
Annual ring cake

Steps for Annual ring cake

Add milk to chocolate and melt in water. Set aside.

Separate the egg yolk from the egg white, and beat the egg yolk with 40g of sugar until white and smooth.

Whisk the egg whites, add the remaining sugar when dispensing, and beat until between neutral and dry foaming.

Sift cocoa powder into egg whites and mix well.

Mix the egg white paste and egg yolk paste well and pour it into a baking sheet. Bake the middle layer for 50 minutes, and drain water on the bottom layer.

After roasting and cooling, cut evenly into 6 equal parts.

Spread the cream beaten to 8 on the cake slices.

Roll the cake slices layer by layer, roll the last piece and cut diagonally.
