Golden Soup Suyan-After two processes: steaming and then boiling. The first steaming is to make the white radish into the taste of bird's nest (so it is called Suyan). Steps for Jin Tang Su Yan

Ingredients: stock, pumpkin, onion, ginger.

Wash the white radish and cut it into thin slices.

Then cut into very thin shredded radish.

Soak the shredded radish in clear water for half an hour, and replace it with water twice in the middle.

After soaking, drain the water.

Pour into a large basin and evenly sprinkle with 3 tablespoons of mung bean starch.

Pour into a boiling water pot and steam over high heat for 5 minutes.

Wash the pumpkin, remove the skin, and steam it in the pan until done. (Generally, it can take 3 minutes after boiling, depending on the thickness.)

Pour the steamed pumpkin and stock into a blender and stir until a paste.

The stirred stock pumpkin paste is poured into the pan and brought to a boil. Add the steamed shredded radish.

Gently disperse the shredded radish with chopsticks, then add 1 teaspoon of salt and a little pepper, boil again to turn off the heat.

Poetic heart phrase: 1: Cut shredded radish has a better taste than shaved, and the thinner the better. 2: If you don't have a blender, you can also mash the steamed pumpkin into pumpkin minced with a spoon while hot. Then mix with the stock. 3: Boil the soup with minced pumpkin first and add the steamed shredded radish. And use chopsticks to gently spread it away rather than press it open with a spatula. 4: In the last step, just use a little hot oil to splash chives and ginger. You don't need much.
