Egg noodles were often eaten when I was a child. The family conditions were not good, but my mother raised a lot of chickens and specially laid eggs for us to eat them. I feel it tastes good every time I eat it.

Steps for egg noodles

Break the eggs and put them in the soup bowl.

Add a small amount of water, add starch (we use my mother's own sweet potato flour, so it's a little granular), and add a little salt. Mix well.

Heat the pan, pour in the vegetable oil, heat the oil and add half of the egg liquid. Smooth the bottom of the pan evenly.

When the egg skin slowly floats, it will prove that it can be turned over. Fry in two portions.

Cut the fried egg cake into shredded strips with a knife.

Put clear water into the pot, add your favorite seasoning, bring to a boil, and sprinkle with chopped green onion. The aroma is fragrant.
