Steps for Perch with sauce

Wash the bass, make a few cuts on both sides of the fish, marinate with salt and cooking wine for 10 minutes, and chop into minced onions, ginger and garlic.

Dip in cornflour and wrap perch.

Shake off the excess cornflour, add it to the oil pan on both sides and fry it until done.

Saute chives, ginger and garlic with oil in the pan.

Add appropriate amount of ketchup, vinegar, sugar, chicken essence, and water to boil.
