Steps for cheesecake

Sift the low flour and corn starch into the cheese paste and stir well

Add egg yolks in portions and stir.

To wet and foam, when the egg whites are beaten into thick bubbles, add 1 tablespoon of white vinegar and continue beating. Add sugar in three times during the beating process. (Because this is also the first time I have done it, it should be OK if I make it slightly bent at the end of the picture)

Quickly remove one-third of the beaten egg white and place it in the cheese paste, cut and mix well. Then pour the cheese paste back into the egg white and cut and mix well.

Pour the cheese paste into the mold coated with olive oil and shake it a few times. Because it is a rookie level, I haven't bought a large mold yet, so I can only make small ones. I made four, and forgot to take pictures of two rectangular ones. It's baked in the oven. Cover these two with plastic wrap and wait to roast.

Preheat the oven to 160 degrees and bake it at 180 degrees with water. When the surface was coloring, I changed it to 150 degrees and continued baking. The baking lasted for a total of 1 hour. The baking plate was also very shallow. Water was quickly added halfway, and the surface was slightly cracked, for an hour, etc.
