Cupcakes
This was the first time I made cupcakes. I had baked them for a long time. The outer skin on the top was thicker, and the inside was relatively soft.

Steps for Cupcakes

Eggs, fine granulated sugar, and low flour are set aside.

Add 30 grams of sugar to egg yolks.

Beat with an egg beater until it turns white and becomes about twice its original size.

Beat the egg white on slow speed until it becomes rough.

Then add 15 grams of sugar in three times, quickly beat until lines appear, and finally show the nine-handed state of small toy hooks.

Take one-third of the egg white and add it to the egg yolk in Method 1.

Stir well with a spatula. Then add the remaining egg white and gently scrape from the bottom of the container and mix well.

Sieve in low-gluten flour.

Use a spatula to mix evenly into batter.

Pour the batter into the paper mold until 9% full.

Preheat the oven to 160 degrees, and heat it up and down.

Bake for 20 minutes. I was afraid that the inside of the cake would not be ripe, so I added it for another 5 minutes. As a result, the skin was a little thick. I recommended that I only take the test for 20 minutes.
