During the Lantern Festival, you must eat glutinous rice balls, which means that the family is united and round. There was no such atmosphere abroad, so we decided to make our own dumplings. I like to eat sesame dumplings very much, but there is no sesame stuffing here, so I have to use local materials and use meat to wrap the dumplings. The meat dumplings are also very delicious.

Steps for meat dumpling

Chop the meat and shallots into minced meat and shredded shallots, mix them together, and add the right amount of oil, salt and 1 tablespoon of light soy sauce. Then stir the meat paste in a circle in one direction until the muscles are tensied.

Put 300 grams of warm water (never use boiling water or cold water) into 300 grams of glutinous rice flour and make dough.

Then gently rub the dough round. (Making meat dumplings is more difficult than sesame dumplings. Because the meat is soft, you must use it gently when kneading it round, otherwise it will easily be crushed by the dumplings.)

Sprinkle some flour on the plate and put the prepared glutinous rice balls one by one into the basin.

Then you can boil water. After the water boils, you can put the prepared glutinous rice balls into the pot one by one. After the glutinous rice balls float, cook for another two minutes or so before you can pick them up and put them into a bowl. 1. Don't use boiling water to mix glutinous rice flour. When I first made it, I followed the instructions on the packaging bag and used boiling water to mix it. As a result, the noodles were all cooked, and my entire hands were covered with noodles, so I couldn't make glutinous rice balls. 2. It is best to rub the meat filling one by one into small meatballs, and then put them into the dough, so that they can be wrapped more easily. 3. You must rub the glutinous rice balls gently, otherwise the glutinous rice balls will easily break.
