Steps for Maotai-flavored chicken wings root

1
Wash the chicken wings roots and dry them in water, chop the ginger and garlic into minced pieces for later use. Prob the roots of the chicken wings with a fork, add a small amount of salt and cooking wine, and marinate for 30 minutes (you must not put too much salt, because bean paste is generally salty).
2
Take the hot oil in the pan, and saute the ginger, garlic, and pepper grains until fragrant.
3
Then add bean paste and stir-fry until fragrant.
4
Stir the marinated fin roots into the pan and stir-fry for 3 minutes until the skin is tightened and set.
5
Add 1 small bowl of water.
6
Cover and simmer to collect the dry juice (turn over once halfway).
