Many friends may eat such a dish when they go to larger restaurants, but I don't know what it is called. There is a lot of soup in a bowl of shredded cucumber. The restaurant says it is abalone juice, and then place a few cooked small abalone on the plate around the bowl. However, the soup is really delicious, but I also know that it is definitely not the juice made by those small abalone. When I first tasted this dish, it was called Laosanzi. It was also made from shredded cucumber and clams meat put in this soup. Later, I found out about this method of fishing and mixing juice online, and today I dedicated it to everyone so that everyone can make it and taste it themselves. Because there was no abalone or clams at hand, only fresh hazel-ground ones I bought two days ago, I mixed them with shredded cucumber, but it did not affect the taste of the sauce.

After cleaning and washing hazel mushrooms, many of our cucumber mixes use lily mushrooms. I don't have them on hand, so I used fresh hazel mushrooms at home.

Blanch the fresh hazel mushrooms with water. If they are canned lily mushrooms, this step will not be necessary. If you are fresh lily mushrooms, you still need to blanch them.

Take a big bowl. Restaurants use glass bowls. If I don't have one at home, I have to use a big soup bowl. Drain the prepared hazel mushroom and place it in the bottom of the bowl. Then cut the cucumber into shredded strips and place it in the bowl. Shredded cucumber is a good way to train knife skills. I don't like to use that kind of insert.

The most important step is to add the sauce. Also prepare a large bowl and a small bowl first. The measuring tool I use is the spoon in the picture. Dissolve two tablespoons of white sugar in a small bowl of water. If you want to cook frequently, it is best to melt it with rock sugar and then place it in the refrigerator to refrigerate and take it wherever you want. Half a bowl of Donggu Yipin fresh soy sauce, two tablespoons of Donggu white vinegar, and two tablespoons of chili oil. Pour all four into a large bowl and mix well.

Because of the measuring tool, I don't have a good grasp of the ratio of flavor and juice. If you want to make it, you can make it according to this ratio. The ratio of sugar water: soy sauce: white vinegar: chili oil is 50:25:10:10. If sugar water is redeemed, it will be water 10: sugar 1. The specific taste is up to all friends to try it yourself!
