Cherry Meat is a famous dish from Northeast China, and it seems to be quite a major dish. It is said that when it was first passed down from the Daotai Prefecture, it was actually braised with cherry juice, but ordinary families couldn't make it that way, so later it was changed to use tomato sauce for seasoning. Because it is made entirely with tomato sauce and not a sauce mix, it is a bit more sour than Sweet and Sour Pork, and the meat is fried very crispy. Personally, I think Cherry Meat made with fatty and lean meat tastes better; if tenderloin isn't fried well, it will get hard, so be careful. However, tenderloin is leaner and a bit healthier.
