Saqima
I like Saqima very much and have always wanted to make it. I took advantage of the weekend to try it according to the thin ash recipe. The taste is really good. Thanks to Bo Hui!

Steps for Saqima

1. Prepare materials.

2. Pour the yeast and egg liquid into a flour bowl. Stir evenly with chopsticks. Mix into dough, cover with plastic wrap and relax for 15 minutes.

3. Divide into two pieces of dough. Roll out the dough into thin slices.

4. Sprinkle flour on the dough sheet, fold it, and cut it into thin noodles.

5. Shake the cut noodles open and sprinkle some flour to prevent adhesion.

6. Heat the oil and fry the noodles in batches.

7. After the noodles are put into oil, they will quickly expand and float. Fry until the noodles change color slightly and can be easily broken. Remove and control the oil.

8. Pour water into the pan, add white sugar, and then add maltose.

9. Cook while stirring over low heat, about 15-20 minutes, cook until the syrup becomes sticky, and pick it up with chopsticks to pull out the silk.
