stir-fried yam with bacon
In the past, my Huaishan potatoes have always been used for making soup. I saw that many gourmets used them for frying, so I also tried frying them. It was really good and quite crispy. There is just a question I don't understand. Why does the Huaishan potatoes change color after being cut and soaked in water?

Steps for stir-fried yam with bacon
