Meiji Lobster with Double Pepper
By MavisDoyle
I rarely eat lobsters, mainly because I don't know how to handle lobsters, and because I see that lobsters are basically cooked with spicy and hemp, and my usual eating habits have always been light. A few days ago, I went to the vegetable market to buy groceries and saw staff from a Sichuan restaurant processing lobsters, so I stopped to ask them how to handle lobsters and how to buy lobsters. On the occasion of the World Cup, lobster has also become the main dish at every Sichuan restaurant and night snack stall. We meet up with close friends and order a few bottles of beer. In front of the TV, we cheer for our favorite team and hope to score more goals.

When selecting lobsters for home cooking, generally look for ones with smaller claws, as these tend to have more meat. Also, cut off the triangular part of the head and the digestive vein; this removes the two dirtiest parts of the lobster. Some people remove the entire head, but that will also remove the roe.
