Steps for Roasted eggplant

Chop the three small cloves of garlic and place them in a bowl, then pour the sesame oil, soy sauce, oyster sauce, salt, 13 spices, and chicken essence into the bowl, marinate, and set aside

Chop the red peppers and shallots and set aside.

Wash the eggplant and cut it open from the middle, leaving a little bit, not cutting it, and also leaving a little bit of the head of the eggplant, not cutting it.

Then draw a diamond shape on the eggplant.

Spread the marinated ingredients in step 1 evenly on the diamond-shaped eggplant, spread tin on the baking sheet, and place the eggplant on the baking sheet.

Preheat the oven to 200 degrees, then put the eggplants coated with sauce into the oven, roast them on high and low heat for 25 minutes, and sprinkle with the red peppers and chopped shallots from step 2.
