After selecting leeks, soak them in salt water for a while, rinse them thoroughly, control the water and cut them into sections.

Peel the carrot and cut it into thin strips.

Beat two eggs with appropriate amount of salt.

Put a little more peanut oil in the pan, heat the oil, pour in the egg liquid, and quickly disperse.

Add the shredded carrots in and stir fry over medium heat until the shredded carrots are soft.

Put the leek root part into the pan, add appropriate amount of salt to taste, and stir fry well. Then put the leek leaves in, stir fry twice and turn off the heat.
