Using purple sweet potatoes to make two-color steamed buns, different methods have different effects. This is an improved version.

Peel the purple potatoes, cut them into small pieces, add a small amount of water and cook them. Cooking saves time than steaming, and cutting small pieces is also to shorten the time. Cook for a few minutes until soft. Don't have too much water, just a little less than purple potatoes. The boiled water is also purple and can be used to mix noodles.

Press the cooked purple potatoes into a paste with a knife. When they are not hot and warm, place them in a basin. Add flour, yeast, baking soda, sweet milk powder, and salt and mix well. About 2 taels of purple potatoes, add about 3 taels of flour.

After kneading the purple dough, knead another white dough in equal amounts, the same way as before, except that no purple potatoes are added. Cover your face with wet gauze to wake up.

After the two doughs have woken up, divide them into 4 equal parts and press them into cake shapes with a rolling pin. One purple dough sheet and one white dough sheet are stacked. The finished product with purple skin is purple steamed buns with white edges, and vice versa. The reason why the purple skin underneath is slightly larger is that the white edge will not be exposed after wrapping it.

Roll up the two overlapping dough sheets starting from one side and rub back and forth to make the two dough sheets stick to each other. Cut into 4 equal parts and shape the shape. The two middle sections are the blanks of two-color steamed buns, so that's it. Add dates to the two sections at both ends.

The dough at both ends stands up as shown in the picture. Turn out the upper purple skin slightly to expose the white skin edge, use your fingers to dig a hole suitable for the jujube, and stuff the soaked jujube in it. The jujube is not cored in order to maintain its beautiful shape.

Put warm water on the drawer to wake up the face for a second time. When the blank is fully grown and about twice the original size, steam it over medium heat and cook it in 15 minutes after the first cooking. Turn off the heat for 3-5 minutes before removing the lid.
