Cold rice + high flour + yeast + sugar knead into a non-sticky dough that can be drawn into a thin film. But, sisters, to tell you privately, I have never kneaded the flour until it can be pulled into a thin film. Although this is the theory, I just figured that my hands would be almost sour. There is another one. In fact, the amount of cold rice must be more or less, so don't worry about it. Weigh the cold rice first, and add the flour until it is not sticky to your hands. Calculate how much flour is put in, and then the ratio of flour to yeast is 300g: 5 g.
