Steps for Almond cocoa cake

1
Take one egg white and add 40g of sugar and almond powder.
2
Stir until sugar melts.
3
Pour in the four egg yolks and mix until evenly smooth.
4
Sieve in low flour and cocoa powder.
5
Use a rubber spatula to mix well (it is very thick and difficult to mix, be sure to cut and mix evenly).
6
Add 40g of sugar to the three egg whites and beat until hard and frothy.
7
Mix 1/3 of the protein paste and batter well, then mix 1/3 of the protein paste and batter well. Finally, pour the batter back into the protein bowl and mix well.
8
Pour batter into baking sheet. Preheat oven to 170 degrees for 30 minutes.
9
A corner was accidentally broken while demoulding, so I simply used a mousse ring to carve two round pieces out.
10
Pour water into the sugar and stir slowly until the sugar water begins to bubble.
11
Add walnut meat.
12
Stir until the soup turns a little yellow.
13
Lay a piece of aluminum foil on the table, pour the walnut paste on it, press it gently, and harden when it cools.
14
Two layers of mousse rings, one layer of cream, and topped with walnut sugar sauce.
