Steps for Banana muffins with whole eggs

Peel the banana and add a little lemon juice and mash it into a puree.

Beat whole eggs with sugar.

Beat the whole eggs with a handheld whisk. Mix the sugar and eggs well at low speed first, then beat at high speed for about 4 minutes, beat at low speed for 1 minute, until the whisk head is lifted, and the egg liquid can stay for a few seconds without dripping.

Add sifted flour and corn starch, and stir well.

Pour the batter into the preheated muffin maker and fill it with 8 minutes. I made three. The picture was the last muffin. I poured all the remaining batter in, but it was too full and leaked a little.

Cover and bake until the steam disappears, about 3 minutes. You can open it.

Transfer the baked muffins to the baking net. Eat it while it's hot. It doesn't taste good when it's cold.
