Steps for Pan-fried saury

1
Remove the gills and viscera of the saury and clean it
2
Cut saury into sections with a slanting knife, marinate with half a teaspoon of salt and cooking wine for about 10 minutes
3
Smash the onion roots and slice the ginger. Remove the chives and other fish and fry them with scissors
4
Heat the oil in a pan until it is 80% hot. Dry the saury with kitchen paper and fry it in the pan.
5
Turn over and fry until brown
6
Spray a little cooking wine, add a proper amount of soy sauce, add two teaspoons of white sugar and a little cumin and black pepper, add a little water, cover and simmer until the juice is over high heat (I didn't want to add water to simmer it, but I think it's saury. It's frozen fish, and the meat is thick, so I'm afraid it's not cooked on the outside. Add a little water and boil it for a while. Don't worry.)
7
Remove from the pot and place into a basin, sprinkle with a little chives
