Steps for Chocolate Qi

Separate the egg yolk and egg white into two containers. The container containing the egg white must be clean, oil-free and water-free.

Add 30 grams of white sugar to the egg yolks and beat until the sugar is completely melted.

Mix ordinary flour, corn starch, cocoa powder, baking powder, and salt, stir well, and sieve into the egg yolk solution.

Add 50 grams of white sugar to the egg white in three portions and beat until hard and foamed.

Spoon one-third of the egg white paste into the chocolate egg paste and gently stir evenly using the upper and lower method.

Pour the stirred batter into the mold and shake off the large bubbles. Preheat the oven to 150 degrees, middle and lower layers, and bake for about 50 minutes.
