Steps for strawberry mousse cake

Prepare and roast an 8-inch basic Qifeng in advance (the Qifeng recipe I will use will be released later)

Soak the strawberries in salt water for ten minutes, then wash them! Pick out 200 grams of some with bad external appearance and break it with a blender for later use!

Cut Qi Feng into two slices, not too thick! Use a knife to cut off the edge 0.5 cm wide around the cake. The cake placed on the bottom should be longer in diameter than the top!

Slice the strawberries and surround the edges, and the strawberry slices are close to the mold, leaving a gap between them and the cake to facilitate the introduction of cream later!

Whisk the cream until 60%, refrigerate for later use, add the cream, melt, and separate from the water and oil!

Add the beaten strawberry juice to sugar and heat until the sugar melts. Add the white chocolate melted in water, and stir well with the fish jelly powder melted in hot water. After cooling slightly, add the strawberry yogurt! (Fish glue powder is not easy to melt, so it is best to pass it through a sieve before it affects the taste! It will be a surprise if you eat it)

Fully mix the strawberry juice prepared in the previous step with the cream, pour it into the prepared mold, and add a layer of strawberry filling in the middle!

Add the second layer of bread and pour in the cream. My bread here is a little thick, and the first layer of cream is a little thick, so the top is round and uneven! Everyone must pay attention when doing it!

An hour later I did some styling on it again! Heat the QQ sugar over water, add the strawberry juice (I use it like a dream, the color is better), cool slightly, and pour it on the cake!
