Mix flour, eggs, water and salt well. Remove and press the dough into a long strip by hand and let stand for 30 minutes.

Remove the awakened dough and press it repeatedly with a dough press. After each pressing, remove the dough sheet and fold it in half and sprinkle with dry flour. Repeat this five to six times until the surface of the dough sheet is dry and smooth.

Finally, it is pressed into slices about 1mm thick, and the long dough sheet is divided into segments about 300mm long.

1. Add eggs and salt to the flour to increase the gluten of the noodles;2. The total amount of eggs and water should not exceed 170g (calculated based on 500g of flour);3. I use an electric noodle press with a large power and can press dry dough. If a manual noodle press is used, the amount of water can be increased appropriately.
