Soak leeks in water for about 15 minutes, wash and chop.

Beat the eggs into a large bowl.

Put the chopped leeks into an egg bowl, add salt and mix well.

Heat the pan, add the cooking oil, turn off the heat to low, and slowly pour in the leek egg liquid. Use a spatula to spread the egg mixture, cover and bake for 2-3 minutes. Turn until the egg liquid has basically solidified. Bake for another minute or so.

Remove the pan and plate it and cut it into pieces
