Chop the ducks into large pieces and soak them in clear water for about half an hour. During this period, the water is changed repeatedly until the blood recedes and the meat turns white.2
Use a clean spoon to take out the rice wine brewed in advance.3
Wash the soaked ducks with clean water.4
Pour in the right amount of salt according to your taste. Pour in the weighed rice wine. Grasp evenly with your hands, fully soak the duck meat in rice wine, and let stand for about 20 minutes.5
Slice ginger and cut green onions into sections. Add water to the pan, place the fully soaked duck meat into the steamer together with rice wine, and add the green onion and ginger slices.6
Sprinkle with medlar, bring to a boil over high heat, and turn to low heat and steam for about 45 minutes.
