Buy a cow tendon, soak it in cold water for half an hour, and then wash it clean.

Put the beef tendon in the pan, add the flour paste, onion, ginger, garlic, cinnamon star anise, and beer (the amount of beer must not exceed the beef tendon and add a proper amount of water), and open fire to boil. After boiling away, skim off the floating powder, turn to low heat and simmer slowly... Add rock sugar halfway through.

Cook until the beef tendon can be easily penetrated by chopsticks, taste it, add soy sauce or salt to season as appropriate, and slightly dry the sauce over high heat. Soak the cooked beef tendon in the sauce for a few hours, slice and serve on a plate when eating.
