Steps for caramel pudding

Put the fine sugar in the pan and turn it over medium heat (shake it constantly to avoid sticking to the pan).

When boiling until color changes, add hot water (90°). Don't add too much water at a time, it may splash out.

Remove from the heat and pour into the pudding model while it is hot.

Pour into the mold.

Cut open the vanilla pod and add it to the milk.

Put milk and sliced vanilla pods in the pan and heat over high heat.

Cover with plastic wrap and steam in a steamer for 5 minutes before boiling quickly.

After steaming, add the light cream and fine sugar and cook over medium heat to 80°.

Put the whole egg and egg yolks in the egg making bowl, slowly add the boiled liquid (to avoid bubbles), and stir well.

Filter out air bubbles with a powder sieve and pour into a mold.

Put 80° hot water into a baking sheet, put in a pudding cup, and bake at 150° for 60 minutes.
