One potato, wash and shred, the thinner the better. Cut the shredded potatoes and soak them in water so that the shredded potatoes will be crispy and hard.

Pour 5g of vegetable oil into a frying pan, heat it over 80% heat, remove the shredded potatoes from the water, add to the pan and stir fry quickly for one minute, add 3g of salt, 5g of sugar, stir fry a few times, and pour in 5g of white vinegar (Pour the white vinegar on a shovel and then flow along the edge of the pan so that the shredded potatoes will not be too sour), pour in the chopped green onion, and stir fry a few times.

Turn off the heat and take out the pan. It is light and delicious. Stir fry on high fire throughout the entire process for no more than 2 minutes.
