Boil a pot of dilute salt water, let cool, soak the kumquats for about 1 hour, then take out the kumquats to dry. It will probably be dry the next day after washing it today. There must be no moisture on the surface.3
Take out your drip bottle. I use a sealed glass bottle sold in the supermarket. Boil with boiling water and dry. You can also dry it with a clean cloth.4
Put the dried kumquat into the bottle. There is a skill in this place. It must be a layer of kumquat and a layer of salt. Don't save on salt. If salt is not put in enough, it will easily go bad. I need a large bag of salt for about 2 kilograms of kumquats. This salt should be the coarse salt.5
Finally, seal the bottle after placing it. If your bottle is not airtight enough, please seal the bottle with two layers of plastic wrap. Then place the bottle in a cool place. It is forbidden to open the lid within a month, otherwise the air will easily deteriorate when it enters. You can not eat it until you leave it for at least 3 months, and when holding kumquats, make sure your utensils are clean and waterless.6
