Steps for scallion cake

1
Add appropriate amount of water to the prepared flour, stir with chopsticks while adding water, stir well and no dry flour, blend with your hands to form a smooth dough. Cover the dough with plastic wrap or convenience bag and soak for about 25 minutes. (Make the dough softer and simmer for a longer time. The cakes baked later will be even more delicious.)
2
Cut the chives into the ground and place them in a small bowl.
3
Knead the dough evenly, then divide it into several doses of the appropriate size you feel, and knead the doses evenly. (The flour I made was only enough to make two cakes, so I divided it into two doses)
4
Roll the kneaded dough into a thin large dough with a rolling pin.
5
Pour appropriate amount of oil onto the large dough sheet and fold the dough back and forth to allow the oil to be evenly distributed on the dough sheet.
6
Sprinkle with salt, pepper noodles, and chopped chives.
7
Roll up dough from one side.
8
Roll up the rolled dough roll from one end and press the end underneath.
9
Use a rolling pin to roll the dough into round cakes.
10
Brush the pan clean and place it on the stove to heat.
11
After heating the pan without moisture, add in the round cake and start to fry. (I don't like fried with oil, so I just browned it without adding oil)
12
When the cake is formed and bulging, turn it over and brand the other side.
13
Drum on both sides and serve the pan. Put the baked cakes on a bamboo basket or other breathable container to dry for a while.
14
Cut the dried cake into small pieces with a knife. (This makes it easier to put food into the cake when eating ~)
