Steps for Maotai-flavored eggplant

    Peel and cut the eggplant into strips, soak in water and drain.

    Make meat sauce. Put the meat filling in the pan and stir-fry until slightly browned. Add half of the green onions, ginger, garlic, red and green peppers in oil and saute until fragrant. Add 1 spoonful of bean paste and 1 hot sauce. Stir fry and mix well. Weigh out the meat sauce for later use.
