Steps for Maotai-flavored eggplant

Peel and cut the eggplant into strips, soak in water and drain.2
Make meat sauce. Put the meat filling in the pan and stir-fry until slightly browned. Add half of the green onions, ginger, garlic, red and green peppers in oil and saute until fragrant. Add 1 spoonful of bean paste and 1 hot sauce. Stir fry and mix well. Weigh out the meat sauce for later use.3
Stir fry the eggplant in oil until 50-ripe, add in the meat sauce. Adjust the water starch and add chicken essence. Pour them into the pan and stir fry until 70 - 80 seconds cooked. Pour in the remaining onions, ginger, garlic and pepper. Add a small amount of water, cover and simmer until done.
