Put the oil, soy sauce, rice wine, spice wine (or star anise) into the pan and boil.

Put the washed and drained chicken into the pan, cover the pan over medium heat and cook for one minute.

Turn chicken and simmer over low heat for 5 minutes.

Then flip the chicken on both sides, use a spoon to scoop the seasoning and spread the chicken evenly (especially the inside of the chicken wings).

1. Do not add water throughout the entire process. A little cooking wine or star anise is sufficient; too much will ruin the flavor of the soy sauce. Braise covered over low heat, and when turning the meat halfway, ensure every part of the chicken is coated with the seasoning. Turn off the heat as soon as the chicken is just cooked; if it cooks too long, the meat will become tough and affect the texture.
2. Do not discard the sauce remaining at the bottom of the pot after braising the chicken. Skim off the excess oil, add a few shallots, and use it as a dip for the chicken breast for a more aromatic flavor. This way, you don't have to worry about the chicken not being rich enough.
