Cut off the whiskers of the prawns, leave the head and tail, peel off the skin, remove the sand line, and rinse it.2
Then slice the cleaned shrimp from the back to connect the abdomen, cut off the muscles, gently pat them flat, and spread them on a plate; add salt, pepper, and cook wine to soak until flavor.3
Beat the eggs and take appropriate amount of flour; dip the prawns in dry flour or starch, hang the egg mixture (be sure to hang it evenly), fry it in a hot oil pan of fifty to sixty percent until both sides are golden brown, remove the pan and serve on a plate, sprinkle with salt and pepper. Serve.
