eggplant
I am not familiar with the jacket box. My husband used to study at a university in Northeast China and often mentioned how delicious the northern eggplant was. When he had dinner yesterday, he asked him: "Do you want to eat the jacket box?" He replied,"Who knows if you can do it well?" Today, I just tried to cook it. As the saying goes, I love my house and my dog. I am very happy to try whatever he likes. Although I am a layman and the cooking is not very good, fortunately, I asked my husband if it was delicious today. He replied I "It's okay." I ate two pieces, and he ate them all for fun. When my husband says it's okay, he means it's delicious. He has a good personality and usually won't say it's delicious.

Steps for eggplant

1
I used the sandwich meat, chopped it, added light soy sauce, a little cooking wine, a little salt, a little chicken essence, added a little bit of the stock with onions, ginger and garlic, put in some chopped green onion and mix well, set aside.
2
Beat the eggs, add appropriate amount of flour, add a little salt and pepper, and mix to form a paste; peel the eggplant, cut into about 5CM slices, and cut in the middle, but do not cut.
3
Stuff the minced meat into the eggplant slices with chopsticks.
4
Then seal it with flour paste for use.
5
Heat the pan, add appropriate amount of oil to the pan, and put the oil temperature to 60%. Turn the heat to medium to medium heat.
6
After more than two minutes, I saw that the shell of the eggplant was a little red, so I switched to another side and fried it.
7
Fry both sides thoroughly, remove and place them in a colander, and drain the excess oil; you can also wrap the eggplant in paste on both sides, which will taste good.
