This is my mother's favorite pasta food. My father used to make it for my mother when I was a child. Now that my father is old, I will cook for them

- wheat flour 250 grams
- qingshui 130 grams
- yeast 2.5 grams
- salt Xiao Xu
- onion 20 grams

Steps for Hanamaki

Get all the materials ready

Heat water to about 38 degrees C, add yeast, and stir well

Pour the evenly stirred yeast water into the flour

Stir with chopsticks to fully blend the water and dough

After the water surface is fused, use your hands to adjust the surface to three lights (i.e. hand light, basin light, and surface light). Then round the dough and cover with plastic wrap

Stir fermentation for about 45 minutes (limited to summer only, the fermentation time should be appropriately increased in winter), and the dough will grow to about twice its size

Wash the green onions, drain them, and cut them into chopped green onions. Set aside

Start rolling the dough and sprinkle some dry powder on the chopping board

Knead the fermented dough on the chopping board to squeeze out the air in the dough. Then use a rolling pin to roll the dough into rectangular thin dough sheets with a thickness of about 3 or 4 mm

Spread the rolled dough evenly with a layer of cooking oil (I use lard this time), sprinkle with some salt and spread evenly

Sprinkle with chopped green onion evenly

Roll it into strips from bottom to top

Cut the rolled dough sheet into 10 equal parts, then stack the two on top of each other

Rub a little dry powder on chopsticks and place it in the middle of the dough

Press hard and take out the chopsticks

Another one. It tastes really good because my mother likes to eat rolls with a little salty taste, so there is no sugar in the formula of this roll. If you like sweets, you can add a little sugar.
