Wash the eggplant, remove the head and tail, cut it into hob shapes, soak in clear water, pick up and drain, sprinkle with a little starch and mix well. Remove the onion from the head to the tail, wash it, and cut it into sections.2
Wash and slice pork. Mince pork. Mix well with 1/2 tbsp soy sauce, 1 tbsp cornstarch, 1/2 tbsp oil and 1/3 tbsp chicken powder. Marinate for 10 minutes.3
Pour 3 tablespoons of oil into the pan and heat it, add in the minced meat and stir-fry until the meat turns white, pick up and set aside.4
Continue to add 10 tablespoons of oil, saute the chives, add the eggplant on high heat, stir quickly, add 5 tablespoons of water and saute until the eggplant is soft, about 5 to 6 minutes.5
Pour in the previously stir-fried minced meat and stir-fry for 1 minute, sprinkle with 1/3 tablespoon salt, 1/5 tablespoon chicken powder and 1/2 tablespoon soy sauce to taste, and you can start the pan.
