Steps for Duck gizzards with pickled pepper

1
Marinate the duck gizzards with spicy fresh meat, pepper, ginger powder and starch for 10 minutes.
2
The pepper I use is local, so I specially showed it to everyone to avoid the wrong size. Wash it and cut it horizontally into circles for later use.
3
Cut pickled peppers into small pieces, and chop ginger and garlic.
4
Put appropriate amount of oil in a frying pan and cook until 50% heat. Add pickled peppers, ginger and garlic and stir-fry until fragrant.
5
Add the duck gizzards and stir-fry until the color changes and there is no soup, add white wine, stir-fry well, and serve out.
6
Remove the fried duck gizzards from the pan for later use;
7
Wash the frying pan and put in a little oil. When it is 70% hot, add the pepper. The purpose of this is to make the pepper in the finished product look more beautiful and refreshing.
8
Saute the pepper until fragrant, then add the fried duck gizzards and a small amount of pickled pepper water, and stir well.
9
Add the soy sauce, salt and chicken essence in turn, stir-fry until the peppers are broken, and serve out of the pan.
