Razor clam meat in scallion oil
By AntonioJerde
My husband and I both like razor clams very much, but we are very picky. We are afraid of having sand or something when we eat them, and we are too lazy to peel the shells. We simply eat the razor clams directly. It feels safe and delicious. This dish is something my husband still wants to eat after eating it.

Steps for Razor clam meat in scallion oil

1
Buying razor clams allows the boss to add some water to raise them, so that you will still be alive and fresh even if you eat them after half a day. Shred ginger, diced garlic, and chopped green onion.
2
Wash the razor clams, add appropriate amount of water to the pan, add a little ginger and cooking wine to the razor clams, blanch for about two minutes, and then fish out.
3
Take a shower, remove the shells and remove the internal organs, as well as some film on the outside, wash them thoroughly, and place them on a vegetable plate.
4
Prepare a little seasoning, including cooking wine, soy sauce, black pepper, a little vinegar, sugar, a little sesame oil, add some oyster sauce, mix well with chopsticks, then pour the seasoning juice on the razor clam meat, sprinkle with ginger and garlic.
5
Add water to the steamer and bring to a boil, add the seasoned razor clams, and steam for about 8 minutes over high heat.
6
Take out the plate, sprinkle with chopped green onion, and add steamed fish soy sauce.
7
Pour a little oil on the heat in the pan, wait until the oil temperature rises to 80%, turn off the heat, and evenly pour the oil on the chopped green onion.
